My Lazy Breakfast Toast (With Jammy Eggs & a Little Honey)
Let’s be real for a second: some mornings, the idea of cooking feels like a full-blown mountain to climb. Between the to-do lists, emails, maybe a toddler clinging to your leg – or honestly, just that desire to stay cozy and do the absolute least – breakfast needs to be quick, easy, and still delicious. Enter: my lazy breakfast toast. It’s the hero of my chaotic mornings, the reliable BFF of my fridge, and honestly, it’s so good I end up making it even when I do have time to cook something more elaborate.

Enter: my lazy-girl breakfast toast. It’s the hero of my chaotic mornings, the reliable BFF of my fridge, and honestly, it’s so good I end up making it even when I do have time to cook something more elaborate.
This toast is my go-to when I don’t have time or the desire to fuss over a full meal. And trust me, after that first bite – with creamy avocado, warm jammy eggs, a kiss of honey, and a hit of red pepper flakes – you’ll understand why I keep coming back to it.
Lazy Breakfast Toast That Doesn’t Feel Like a Cop-Out
You know those breakfasts that are basically a granola bar and coffee? Yeah, that used to be me. But over time, I started craving something a little more nourishing in the mornings. Something that didn’t take 40 minutes or an arm workout, but also didn’t feel sad. This toast checks every single box:
- Satisfying and balanced
- Packed with healthy fats and protein
- Ready in 10 minutes or less
- Surprisingly indulgent thanks to the unexpected drizzle of honey
It tastes like something you’d order at a brunch spot with rustic wooden tables and perfectly steamed oat milk lattes, but it’s made with stuff you probably already have at home.
Let’s Talk About Jammy Eggs
If you’ve never made jammy eggs before, they’re about to become your new obsession. They’re somewhere between soft-boiled and hard-boiled – firm whites, golden yolks that are just set and creamy in the middle. They’re elegant, protein-packed, and way easier than they look.
The secret is boiling them for exactly 6 minutes, then immediately dunking them in an ice bath. That shocking cold water stops the cooking right away and makes peeling a breeze. Pro tip? Make them ahead. Seriously, boil a bunch on Sunday, keep them in the fridge, and they’ll stay perfect for 3–4 days. Lazy mornings just got even easier.
That Sweet-Savory Balance
Here’s the thing: you don’t need to add honey to this toast. But I highly, highly recommend it.
Something magical happens when the rich avocado, salty eggs, spicy red pepper flakes, and a tiny drizzle of honey all come together. It’s the kind of combo that wakes up your palate and makes you go, “Wait… what did I just eat?” in the best way.
It’s sweet, it’s savory, it’s a little spicy – and it’s totally addictive.
Customize it (Because We Love Options)
One of the best parts about this toast? It’s endlessly customizable. I’ve made it with:
- Sourdough, whole wheat, and even seeded rye – whatever bread you’ve got will work.
- A swipe of labneh or goat cheese under the avocado for extra tang.
- A sprinkle of everything bagel seasoning instead of red pepper flakes.
- Topped with microgreens, cherry tomatoes, or radish slices if I’m feeling a little fancy.
But 9 times out of 10, I stick to the OG combo below, because it’s just so right.
Why You’ll Love This Lazy Breakfast Toast

If you’re searching for an easy breakfast idea, healthy toast recipe, or just want to elevate your egg game, this is the one.
I love this toast because it feels like I did something fancy, even though I barely lifted a finger. It’s the breakfast that makes me feel a little more put-together on the days I’m very much not. And maybe that’s the magic of food – sometimes it’s the littlest things, the simple moments, that bring the most comfort.

Lazy Breakfast Toast with Jammy Eggs, Avocado & Honey
Ingredients
- Ingredients Serves 1
- 1 slice multigrain bread or bread of choice, toasted
- ½ medium avocado
- 2 jammy eggs
- Flaky sea salt to taste
- Red pepper flakes to taste
- Drizzle of honey
For the jammy eggs:
- 2 large eggs
- Ice + water for ice bath
Instructions
Make the jammy eggs:
- Bring a small saucepan of water to a boil. Once boiling, carefully lower the eggs in with a spoon. Set a timer for exactly 6 minutes.
- When the timer goes off, immediately transfer the eggs to a bowl of ice water and let them chill for at least 5 minutes. Then peel gently.
Toast your bread:
- While the eggs chill, toast your multigrain bread to your desired crispness.
Assemble the toast:
- Mash the avocado on the toast. I like to keep it a little chunky for texture.
- Slice your jammy eggs in half and lay them over the avocado.
- Sprinkle generously with sea salt and red pepper flakes.
- Drizzle a little honey over the top – trust me on this one.

Notes
- Jammy eggs: Store in the fridge, unpeeled, for up to 4 days.
- Avocado: If prepping ahead, brush the cut side with lemon juice and store tightly wrapped in the fridge to minimize browning.
- Toast assembly: Best fresh! But if you must, you can pre-toast and store in a sealed container to re-crisp in a toaster oven later.
