Avocado Toast with Harissa Fried Egg, Feta & Chives

Ingredients
  

  • 1 slice of multigrain bread toasted
  • ½ ripe avocado
  • 1 egg
  • 1 –2 tsp harissa paste
  • 1 tbsp crumbled feta cheese
  • 1 tsp chopped fresh chives
  • Salt to taste

Method
 

  1. Toast the multigrain bread until golden and crisp.
  2. In a small bowl, mash the avocado with a pinch of salt.
  3. Heat a small nonstick pan over medium heat. Add the harissa paste and let it sizzle.
  4. Crack the egg into the pan and cook to your desired doneness.
  5. Spread the avocado over the toast. Top with the fried egg.
  6. Sprinkle with feta, chives, and more salt if needed.
  7. Serve immediately.
