Baked Brie with Olives and Tomatoes

This baked Brie with olives and tomatoes is an easy yet elegant appetizer that’s warm, gooey, and packed with Mediterranean flavor. Topped with cherry tomatoes, green olives, Italian seasoning, and a drizzle of olive oil, it’s baked to perfection and best served with crusty bread or crackers.

Ingredients
  

  • 1 small to medium wheel of Brie
  • 1 cup cherry tomatoes whole or halved
  • ½ cup grilled green olives whole or roughly chopped
  • tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Fresh bread or crackers for serving

Method
 

  1. Preheat your oven to 390°F (200°C).
  2. Place the Brie in a baking dish or oven-safe skillet.
  3. Top with cherry tomatoes and grilled olives.
  4. Sprinkle with Italian seasoning and drizzle with olive oil.
  5. Bake for 20 minutes, or until the Brie is soft and melty.
  6. Serve immediately with bread or crackers.

Notes

You can prep the toppings in advance - mix the tomatoes and olives with the seasoning and olive oil. Keep them refrigerated until you’re ready to bake.
However, I don’t recommend baking the Brie until just before serving. The texture is best when freshly melted and warm.
