  • 2 cups arugula loosely packed
  • ½ ripe pear sliced (not overripe)
  • 1 slice prosciutto torn
  • 1 oz feta cheese crumbled
  • 1 tbsp almond petals and dried cranberries mix
  • 1 tbsp unsalted butter
  • 1 tsp brown sugar
  • 1 tsp lemon juice
For the Dressing:
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and freshly ground black pepper to taste

Method
 

Caramelize the Pear:
  1. In a small skillet over medium heat, melt the butter. Add brown sugar and cook for 30 seconds, stirring gently. Add 1 tsp lemon juice and sliced pear. Cook for about 1 minute, turning once, until just softened but still holding shape. Remove from heat.
Make the Dressing:
  1. In a small bowl, whisk olive oil, lemon juice, salt, and pepper until well combined.
Assemble the Salad:
  1. Place arugula on a plate. Top with warm pear slices, torn prosciutto, and crumbled feta. Sprinkle with almond petals and dried cranberries.
Dress and Serve:
  1. Drizzle the lemon dressing over the salad. Toss lightly if desired, or serve as-is. Enjoy immediately!
