Method
- Heat a non-stick frying pan over medium heat.
- Add the sliced plums and cook until softened and juicy, about 5 minutes.
- Add honey and thyme, stir gently, and let warm through for 1 minute.
- Remove from heat and let cool slightly.
- Pile plums on toast, crumble feta over the top, and garnish with fresh thyme.
- Serve immediately.
