Ingredients
  

  • 1 ripe plum pitted and sliced
  • 1 tbsp honey
  • 1 thyme sprig plus more for garnish
  • 1 tsp feta cheese crumbled
  • 1 slice bread toasted

Method
 

  1. Heat a non-stick frying pan over medium heat.
  2. Add the sliced plums and cook until softened and juicy, about 5 minutes.
  3. Add honey and thyme, stir gently, and let warm through for 1 minute.
  4. Remove from heat and let cool slightly.
  5. Pile plums on toast, crumble feta over the top, and garnish with fresh thyme.
  6. Serve immediately.
