Cheesy Roasted Tomatoes Toast with Burrata

Sweet Campari tomatoes are roasted with garlic, olive oil, basil, red pepper flakes, and Parmesan, then spooned over crisp toasted bread. A swipe of burrata takes this simple dish to the next level - perfect for brunch, lunch, or light dinner.

Ingredients
  

  • 3 Campari tomatoes halved
  • 1 garlic clove thinly sliced
  • 1/4 tsp red pepper flakes
  • 1/2 tsp dried basil
  • 3 tbsp olive oil
  • Salt to taste
  • 2 tbsp freshly grated Parmesan or Mozzarella, Gouda, etc.
  • Sourdough or rustic bread toasted
  • Burrata cheese for topping (optional)
  • Fresh basil leaves optional, to garnish

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Place tomato halves cut-side up in a small baking dish.
  3. Add garlic, red pepper flakes, salt, basil, and olive oil.
  4. Top with Parmesan or other cheese.
  5. Roast for 15 minutes, until tomatoes soften and cheese bubbles.
  6. Toast your bread while the tomatoes roast.
  7. Spread burrata on toast (if using), then spoon on the roasted tomatoes and pan juices. Top with fresh basil, if using.
  8. Serve immediately and enjoy.
