Method
Sauté the garlic & tomatoes:
- Heat olive oil in a small skillet over medium heat. Add sliced garlic and cook until just fragrant - about 30 seconds to 1 minute. Don’t let it brown.
Add the tomatoes:
- Stir in the halved cherry tomatoes, a pinch of salt, red pepper flakes, dry oregano, and red wine vinegar.
Simmer until jammy:
- Reduce heat to medium-low and cook for 5–10 minutes, stirring occasionally, until tomatoes break down and become saucy and jammy. Remove from heat.
Cook the egg:
- In a separate pan (or wipe the same one clean), cook your egg sunny-side-up to your desired doneness.
Assemble the toast:
- Place toasted bread on a plate. Spoon the warm tomato mixture generously over the toast. Carefully place the sunny-side-up egg on top.
Top it off:
- Crumble feta over the egg and finish with a few fresh oregano leaves.
