Cozy Warm Breakfast Toast with Jammy Tomatoes, Feta & Egg

A cozy, savory breakfast toast with jammy cherry tomatoes, a sunny-side-up egg, and crumbled feta on crisp multigrain bread. Ready in 15 minutes and perfect for any season.

Ingredients
  

  • 1 piece of multigrain bread toasted
  • 1 tsp olive oil
  • 1 cup cherry tomatoes halved
  • 1 garlic clove thinly sliced
  • ½ tsp red wine vinegar
  • ½ tsp dry oregano
  • Salt to taste
  • Red pepper flakes to taste
  • 1 tbsp block feta cheese crumbled
  • Fresh oregano leaves for garnish
  • 1 egg

Method
 

Sauté the garlic & tomatoes:
  1. Heat olive oil in a small skillet over medium heat. Add sliced garlic and cook until just fragrant - about 30 seconds to 1 minute. Don’t let it brown.
Add the tomatoes:
  1. Stir in the halved cherry tomatoes, a pinch of salt, red pepper flakes, dry oregano, and red wine vinegar.
Simmer until jammy:
  1. Reduce heat to medium-low and cook for 5–10 minutes, stirring occasionally, until tomatoes break down and become saucy and jammy. Remove from heat.
Cook the egg:
  1. In a separate pan (or wipe the same one clean), cook your egg sunny-side-up to your desired doneness.
Assemble the toast:
  1. Place toasted bread on a plate. Spoon the warm tomato mixture generously over the toast. Carefully place the sunny-side-up egg on top.
Top it off:
  1. Crumble feta over the egg and finish with a few fresh oregano leaves.
Enjoy immediately, ideally with a warm drink and zero obligations :)
