Ingredients
  

  • 1 thick slice sourdough toasted
  • 1 tablespoon garlic confit cloves
  • 2 teaspoons garlic confit oil
  • 2 tablespoons basil pesto
  • 3 tablespoons cottage cheese
  • ½ cup grape or cherry tomatoes halved
  • 1 teaspoon extra virgin olive oil
  • Salt and black pepper to taste
  • Fresh basil leaves chopped or torn

Method
 

  1. In a small bowl, mix tomatoes with olive oil, salt, pepper, and fresh basil. Set aside.
  2. Toast the sourdough slice until golden and crisp.
  3. Spread garlic confit cloves gently over the toast.
  4. Add a layer of basil pesto.
  5. Spoon cottage cheese evenly across the top.
  6. Finish with the marinated tomato mixture.
  7. Drizzle with garlic confit oil and garnish with fresh basil.
  8. Serve immediately and enjoy!
