Crostini with Roasted Tomatoes and Tuna

Ingredients
  

  • 8 thick slices of baguette toasted
  • 4 medium ripe Campari tomatoes halved
  • 1 5-oz can solid tuna in water, drained and flaked
  • 2 garlic cloves thinly sliced
  • ½ tsp dried oregano
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh parsley
  • 2 tbsp freshly grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Arrange tomato halves cut-side up in a small baking dish. Season with salt, pepper, and oregano.
  3. Add sliced garlic and scatter tuna evenly between the tomatoes.
  4. Drizzle with olive oil and sprinkle parsley on top. Cover with foil and bake for 15 minutes.
  5. Uncover, lower temperature to 390°F (200°C), and bake for another 5 minutes until tomatoes are soft and slightly caramelized.
  6. Meanwhile, toast baguette slices until golden and crisp.
  7. Top each slice with one tomato half, spooning tuna and juices over the top.
  8. Finish with grated Parmesan and an extra drizzle of olive oil. Serve immediately.
