Easy Garlic Confit

Ingredients
  

  • 2 cups peeled garlic cloves
  • ½ to ¾ cup extra virgin olive oil enough to fully submerge the garlic
  • Optional: thyme rosemary, oregano, red pepper flakes

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Add garlic to a deep baking dish and pour in enough olive oil to fully cover.
  3. Add your herbs and spices.
  4. Cover with foil and roast for 40 minutes until garlic is tender and lightly golden.
  5. Cool completely, then transfer garlic and oil to a sterilized glass jar.
  6. Store in the fridge for up to 2 weeks. Always keep garlic submerged in oil.
