Roast the Mushrooms
- Preheat your oven to 390°F (200°C) or your air fryer to 350°F (175°C).
- Arrange mushrooms, stem side up, in a baking dish. Season with salt and pepper, then drizzle with olive oil.
- Bake for 15 minutes in the oven or 10 minutes in the air fryer.
- Once cooked, drain any excess liquid and transfer the mushrooms to a serving plate.
Make the Creamy Feta Filling
- While the mushrooms are roasting, prepare the filling:
- In a bowl, mash feta cheese with Greek yogurt until smooth.
- Add garlic, dill, salt, and pepper. Mix well.
Assemble & Garnish
- Spoon the creamy feta mixture into the roasted mushroom caps.
- Sprinkle with bacon bits for a crispy, smoky touch.
- For an elegant finish, garnish with fresh dill and pomegranate arils (optional but highly recommended!).

Tips & Variations
Make it vegetarian – Skip the bacon and add toasted pine nuts or sunflower seeds for a nice crunch.
Elevate the flavor – A pinch of crushed red pepper flakes will add a little heat.
Experiment with cheese – Try goat cheese or ricotta for a different twist! These feta-stuffed mushrooms are best enjoyed warm, but they also hold up well at room temperature—perfect for parties! Pair them with a crisp white wine or a light cocktail for the ultimate appetizer experience.
