Ingredients
  

  • 7 large baby bella mushrooms stems removed
  • 1 tsp olive oil
  • 2 oz feta cheese
  • 2 tbsp plain Greek yogurt
  • 1 garlic clove finely minced
  • 1 tbsp dill finely chopped
  • Salt and pepper to taste
  • Bacon bits for garnish
  • Fresh dill & pomegranate arils optional, for garnish

Method
 

Roast the Mushrooms
  1. Preheat your oven to 390°F (200°C) or your air fryer to 350°F (175°C).
  2. Arrange mushrooms, stem side up, in a baking dish. Season with salt and pepper, then drizzle with olive oil.
  3. Bake for 15 minutes in the oven or 10 minutes in the air fryer.
  4. Once cooked, drain any excess liquid and transfer the mushrooms to a serving plate.
Make the Creamy Feta Filling
  1. While the mushrooms are roasting, prepare the filling:
  2. In a bowl, mash feta cheese with Greek yogurt until smooth.
  3. Add garlic, dill, salt, and pepper. Mix well.
Assemble & Garnish
  1. Spoon the creamy feta mixture into the roasted mushroom caps.
  2. Sprinkle with bacon bits for a crispy, smoky touch.
  3. For an elegant finish, garnish with fresh dill and pomegranate arils (optional but highly recommended!).
