Ingredients
  

For the Toast:
  • 2 slices sourdough bread
  • 1 tbsp olive oil for brushing
For the Topping:
  • 1 ball 4 oz fresh mozzarella, torn or sliced
  • 1 cup cherry tomatoes thinly sliced
  • Salt and freshly cracked black pepper to taste
For the Garlic-Herb Olive Oil:
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic grated or minced
  • 1 tbsp fresh basil finely chopped
  • 1 tbsp fresh parsley finely chopped
  • 1 pinch red pepper flakes optional
  • Zest of ½ lemon optional

Method
 

Make the Garlic-Herb Oil
  1. In a small bowl, combine olive oil, garlic, chopped herbs, red pepper flakes, and lemon zest. Let sit 5–10 minutes to infuse.
Toast the Bread
  1. Brush sourdough slices with olive oil and toast on a pan or in a 400°F oven until golden and crisp, 6–8 minutes.
Assemble the Toast
  1. Layer mozzarella over the warm toast. Add sliced tomatoes, season with salt and pepper, and spoon garlic-herb oil generously over the top.
Serve Immediately
  1. Enjoy right away while the bread is still crisp and the mozzarella slightly soft.
