Make the Garlic-Herb Oil
- In a small bowl, combine olive oil, garlic, chopped herbs, red pepper flakes, and lemon zest. Let sit 5–10 minutes to infuse.
Toast the Bread
- Brush sourdough slices with olive oil and toast on a pan or in a 400°F oven until golden and crisp, 6–8 minutes.
Assemble the Toast
- Layer mozzarella over the warm toast. Add sliced tomatoes, season with salt and pepper, and spoon garlic-herb oil generously over the top.
Serve Immediately
- Enjoy right away while the bread is still crisp and the mozzarella slightly soft.
