Pear Cheesecake with Prosciutto (No-Bake Appetizer)

Ingredients
  

  • 4 oz cream cheese softened
  • 2 tbsp plain Greek yogurt
  • 1 ripe D’Anjou pear peeled, cored, and diced
  • 1/2 tsp fresh lime zest
  • 1 tbsp honey
  • 1 tbsp butter melted
  • 1/2 sleeve Ritz crackers
  • 2 slices prosciutto torn
  • Extra honey and lime zest for garnish

Method
 

  1. Add Ritz crackers to a food processor and blend until finely crushed. Add melted butter and pulse until combined.
  2. Press the crumb mixture into a 6” ring mold or small springform pan. Chill in the fridge for 15 minutes.
  3. In a bowl, beat cream cheese, yogurt, lime zest, and honey until smooth. Stir in diced pear.
  4. Spread the cheese mixture over the chilled crust and smooth the top. Chill for at least 30 minutes.
  5. Carefully remove from the mold. Top with torn prosciutto, extra honey, and lime zest.
  6. Serve immediately and enjoy!
