Ingredients
  

  • ½ small avocado cubed
  • 1 ripe Campari or Roma tomato cubed
  • 1 tsp fresh basil chopped
  • ½ tsp lemon juice
  • 1 tsp extra virgin olive oil
  • Salt to taste
  • 1 slice sourdough bread or bread of choice, toasted
  • 1 garlic clove
  • ½ tsp toasted pine nuts optional

Method
 

  1. Toast the bread until golden and crisp.
  2. In a bowl, gently mix avocado, tomato, basil, lemon juice, olive oil, and a pinch of salt.
  3. Rub the toasted bread with the garlic clove.
  4. Top toast with avocado-tomato mixture.
  5. Sprinkle with pine nuts, if using.
  6. Enjoy immediately!
