Ingredients
  

  • 2 medium tomatoes sliced
  • 1/2 red onion thinly sliced
  • 1 tbsp olive oil
  • salt and pepper
  • 1 tsp dried oregano
  • 1 sheet frozen puff pastry
  • 4 oz cream cheese softened
  • 1/4 cup ranch dressing
  • 1/2 cup parmesan cheese
  • 1/2 cup chopped parsley

Method
 

  1. Preheat oven to 400°F. Arrange tomatoes and onion on parchment-lined baking sheet. Season with salt, pepper, oregano, and olive oil. Roast 30 minutes.
  2. Roll puff pastry into a 10×10 square, score edges, prick center, bake 15 minutes until golden. Cool.
  3. Mix cream cheese, ranch, parsley, and parmesan. Spread over cooled pastry. Top with roasted tomatoes and onion. Garnish with parsley.
