Simple Tomato Feta Toast

If you’re in the mood for something savory, fresh, and a little tangy - this tomato and feta toast is your new obsession!

Ingredients
  

  • 1 slice of sourdough bread or your favorite bread
  • 1/2 ripe tomato sliced thick
  • 2 tablespoons crumbled Feta cheese
  • 1/2 garlic clove
  • 1 tablespoon olive oil plus more for drizzling
  • Fresh basil leaves
  • Salt and freshly ground black pepper to taste

Instructions
 

  • Heat a medium skillet over medium heat and add 1 tablespoon of olive oil.
  • Place the bread and tomato slices in the skillet. Cook for about 1 minute until the bread is golden and the tomatoes start to soften.
  • Flip both the bread and the tomatoes. Season the tomatoes with a pinch of salt and pepper, and sprinkle the crumbled Feta over the tomato slices.
  • Cover the skillet with a lid or foil and cook for another 30 seconds to a minute, just until the cheese begins to soften.
  • Remove from heat. Rub the toasted bread with the cut side of the garlic clove.
  • Layer the warm tomatoes (with their melty Feta) over the toast.
  • Drizzle with a little more olive oil, sprinkle fresh basil on top, and serve immediately.
