Simple Tomato Feta Toast

Ingredients
  

  • 1 slice of sourdough bread or your favorite bread
  • 1/2 ripe tomato sliced thick
  • 2 tablespoons crumbled Feta cheese
  • 1/2 garlic clove
  • 1 tablespoon olive oil plus more for drizzling
  • Fresh basil leaves
  • Salt and freshly ground black pepper to taste

Method
 

  1. Heat a medium skillet over medium heat and add 1 tablespoon of olive oil.
  2. Place the bread and tomato slices in the skillet. Cook for about 1 minute until the bread is golden and the tomatoes start to soften.
  3. Flip both the bread and the tomatoes. Season the tomatoes with a pinch of salt and pepper, and sprinkle the crumbled Feta over the tomato slices.
  4. Cover the skillet with a lid or foil and cook for another 30 seconds to a minute, just until the cheese begins to soften.
  5. Remove from heat. Rub the toasted bread with the cut side of the garlic clove.
  6. Layer the warm tomatoes (with their melty Feta) over the toast.
  7. Drizzle with a little more olive oil, sprinkle fresh basil on top, and serve immediately.
