Spicy Shrimp Stack

Ingredients
  

  • ½ lb cooked shrimp peeled, deveined, chopped
  • 1 tbsp kewpie mayo
  • ½ to 1 tbsp Sriracha to taste
  • 1 tbsp green onion finely chopped
  • ½ cup chopped tomatoes
  • ¼ cup cucumber finely chopped
  • 1 tbsp red onion finely chopped
  • 1 tbsp cilantro roughly chopped
  • ½ tbsp sesame oil
  • ½ lime juice only, divided
  • 1 avocado diced
  • Salt to taste
  • Sesame seeds for topping
  • Microgreens for garnish (optional)

Method
 

  1. In a bowl, mix shrimp with kewpie mayo, Sriracha, and green onion.
  2. In another bowl, toss tomatoes, cucumber, red onion, cilantro, sesame oil, half the lime juice, and salt.
  3. Mash avocado lightly with the remaining lime juice and salt.
  4. Using a food ring, layer avocado on the bottom, shrimp in the middle, and salsa on top.
  5. Remove the ring carefully, then garnish with sesame seeds and microgreens. Serve immediately.
