Ingredients
  

  • 1 slice sourdough toasted
  • ½ ripe avocado
  • 1 thick slice of tomato
  • Salt & pepper to taste
  • 2 strips bacon cooked
  • 1 egg
  • 1 tbsp feta cheese crumbled
  • ¼ tsp red pepper flakes optional
  • 1 tsp fresh dill chopped (or other fresh herbs)

Method
 

  1. Toast the sourdough until golden brown.
  2. Mash the avocado with salt and pepper, then spread over the toast.
  3. Layer with a thick tomato slice.
  4. Add crispy bacon on top.
  5. Fry an egg sunny-side-up and place it over the bacon.
  6. Sprinkle with feta, red pepper flakes, and fresh herbs.
  7. Serve immediately and enjoy!
