Ingredients
  

For the Salmon:
  • 1 boneless skinless salmon fillet (6 oz per person)
  • 2 tbsp sweet chili sauce
  • 1 tbsp mayonnaise
For the Quinoa Mango Salad:
  • 2 cups quinoa cooked & cooled
  • 1 cup cucumber cubed
  • 1 cup bell pepper any color, cubed
  • 1 cup tomatoes chopped
  • 1 cup ripe mango peeled & cubed
  • 1/2 cup green onion chopped
  • 1/2 cup fresh cilantro chopped
  • 1/2 tsp chili powder
  • 2 tbsp olive oil
  • Salt to taste
  • Lime wedges for serving

Method
 

Prepare the Sweet Chili Salmon
  1. Mix sweet chili sauce and mayonnaise.
  2. Pat salmon dry, then coat it with the glaze.
  3. Air fry at 380°F (193°C) for 12-15 minutes or bake at 400°F (200°C) for the same time.
Make the Quinoa Mango Salad
  1. Cook quinoa and let it cool.
  2. Chop the mango, cucumber, bell pepper, tomatoes, green onion, and cilantro.
  3. Toss everything together with chili powder, olive oil, and salt.
Assemble & Serve
  1. Plate salmon over quinoa salad.
  2. Squeeze fresh lime juice on top & enjoy!
