Prepare the Sweet Chili Salmon
- Mix sweet chili sauce and mayonnaise.
- Pat salmon dry, then coat it with the glaze.
- Air fry at 380°F (193°C) for 12-15 minutes or bake at 400°F (200°C) for the same time.
Make the Quinoa Mango Salad
- Cook quinoa and let it cool.
- Chop the mango, cucumber, bell pepper, tomatoes, green onion, and cilantro.
- Toss everything together with chili powder, olive oil, and salt.
Assemble & Serve
- Plate salmon over quinoa salad.
- Squeeze fresh lime juice on top & enjoy!
