Homemade Sun-Dried Tomatoes with Plums & Garlic

prune plums
halved and pitted

Method
Preheat oven to 250°F.
Toss tomatoes, plums, garlic, herbs, salt, and olive oil.
Spread on a parchment-lined sheet. Roast 3 ½–4 hours until chewy and shriveled.
Cool, jar, and cover fully with olive oil.
Refrigerate up to 4 days.
