Ingredients
  

  • 1 slice of sourdough or rustic bread
  • 2 tbsp feta cheese crumbled or sliced
  • 1 tsp basil pesto
  • 1 large egg
  • 1/2 ripe avocado
  • 1/4 tsp granulated black garlic or mashed black garlic clove
  • Salt and black pepper to taste
  • Fresh dill for garnish
  • Olive oil for toasting optional

Method
 

  1. In a small nonstick skillet, add feta and spoon pesto over the top.
  2. Cook over medium heat until the feta softens and begins to sizzle.
  3. Crack the egg in the center, season with salt, pepper, and black garlic.
  4. Cook until the egg reaches your desired doneness.
  5. Toast the bread and spread avocado on top.
  6. Place the cooked egg and feta on the toast.
  7. Garnish with fresh dill and serve immediately.
