Whipped Avocado Cream
  • 1 ripe medium avocado
  • 2 oz feta cheese
  • Pinch of salt
  • Pinch of red pepper flakes
  • 1 teaspoon extra virgin olive oil
Toast
  • 2 slices bread sourdough or multigrain, toasted
  • 4 oz smoked salmon
  • 1 small red pearl onion thinly sliced
  • 2 tablespoons crumbled feta cheese
  • Fresh dill for garnish

Method
 

  1. Add the avocado, feta cheese, salt, red pepper flakes, and olive oil to a blender or food processor. Blend until completely smooth and creamy, stopping to scrape down the sides if needed.
  2. Toast the bread slices until golden brown and crisp.
  3. Spread the whipped avocado cream generously over each slice of toast.
  4. Arrange the smoked salmon on top of the avocado layer.
  5. Finish with sliced red pearl onion, crumbled feta, and fresh dill. Serve immediately.
